Each week I think about what pumpkin recipes I want to make, there are just so many! I have a binder (old school pinterest) of all my tried and true pumpkin recipes, and Lord knows I want to make all of them in one weekend! I can’t, I would eat them all and that’s not a good idea! This pumpkin cookie is a must, and I’m sure I’ll make it a few time before the year is over. Its moist, full of pumpkin flavor and the added chocolate chips just puts it over the edge for me. I must say that using good cinnamon is very important to enhance the pumpkin flavor. I use Vietnamese Cinnamon ( you can buy on amazon). Its worth the little extra cost for all your pumpkin recipes.
My little trip to the pumpkin patch of course was the inspiration I needed to come home and start the mixer for a pumpkin creation!

Pumpkin Oatmeal Cookies
2 cups AP flour
1 cup of oats ( I process in food processor for 5-8 seconds to cut up a little)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp salt
1 cup butter, soft
1 cup brown sugar ( light)
1 cup regular sugar
1 egg
1 tsp vanilla
1 cup canned pumpkin
1 cup chopped pecans or chocolate chips
- Cream butter, pumpkin and sugars until smooth and creamy
- Add egg and vanilla
- Slowly add all your dry ingredients and chips
- Bake on lined cookie pan 350 for 14 minute. Makes about 3 doz cookies
