Ice cream cone Cupcakes

I don’t know about you, but this summer has seemed crazy hot. I have not wanted to do bake or cook more than I have to. Having said that, I still love to make things that are fun for summer time. These cupcakes were made often when I was a child and they are great for birthday parties, picnics or just a fun project in the kitchen. It won’t involve long baking times or stress! Best part is you can make so many variations and be creative as you wish!

The type I did for this entry was strawberry cake and chocolate buttercream. You can use any cake mix flavor or frosting as you like. A fun variation may be chocolate cake and then crush up Oreo’s and fold them in buttercream and add a Oreo for garnish on top! M and M’s and mini resses peanut butter cups make great fun garnishes too.

You will need:

1 cake mix, flavor of choice. ( the ingredients it says you need as well for it)

Ice cream cones 12-18

Icing of choice, premade or make your own. You can even use cool whip! 1-1 1/2 cups will be needed for 12 cupcakes

Decorator icing bag and tip  or just use a spatula to frost

Sprinkles or candies of your inspiration

Mini cupcake pan for balancing the ice cream cones for baking, or place them in any cake pan fitting enough of them in there that they wont fall over

  1. Make cake mix to the directions on the back of the box
  2. Fill the cones 2/3 full
  3. Bake 350 for 20 minutes. Test the centers with toothpick though to make sure they are done
  4. Cool and then decorate as you desire
