Chocolate Peanut Butter Tart

Well, its been awhile since I have done a post. The last 60 days of my life have been a blurrrrrr… and I have no idea where the time went.. I am sitting here in my new office/baking space in South Carolina. Trying to take it all in and wondering how did I get here? We wanted to get a house out of the city limits  with more potential space for my baking business..so we thought we would see what would happen if we put our house on the market and  BOOM house sold! Before I knew it, our house search took us across the border to SC, where it’s a  different world here. I guess that’s the point right? I like it, dont get me wrong, its the change I wanted, but that doesn’t mean you instantly adapt. Its gonna be weird for awhile and I do know baking and experimenting in the kitchen will be my therapy.

SO lets get to it, Chocolate Peanut Butter Tart…do I dare say its GLUTEN FREE? I haven’t figured out if I want to mention it, because you might loose some, or gain some.  I had mentioned in my post from November that my daughter was diagnosed with Celiacs disease, so a lot of gluten free baking has been happening in my house for over 6 months. BUT I always say, it has to taste like ITS NOT gluten free.. not at all! I thought I would experiment a little this week since I have been consumed with packing and unpacking for the last 2 months..I needed to just do something fun. I love the presentation of this tart as well as how easy it is to make!

If you like peanut butter than this is the recipe for you! You will love the creamy texture and the hint of chocolate, kind of has a Reese’s peanut butter cup feel to it. I did not want to make it too rich, so I drizzled the chocolate, but feel free to just cover the top of it! I mean, why not!?! One can  never have too much chocolate..or at least that’s what my mother used to say! HA!

The only special  piece of  baking equipment you need it a tart pan and you can get them here on Amazon. I think you might get excited using this pan, it has removable bottom so it doesn’t STICK to the bottom and comes out so neat and clean. You will feel like a baking rock star, I’m sure of it!

Here’s the recipe: Chocolate Peanut Butter Tart

Tart Crust:

Use a 7-inch tart pan

1 ½ cups Almond flour

4 TBSP cocoa powder

3 TBSP brown sugar

5 TBSP butter, melted

Filling:

1 ½ creamy peanut butter

½ cup butter (no substitute)

1 c powdered sugar

Ganache:

1 cup semi-sweet chocolate chips

½ cup heavy cream

***Chopped salted peanuts to garnish with if you want crunch

  1. Preheat oven 350 and lightly spray tart pan
  2. Combine all the tart ingredients and firmly pack it into the tart pan, pressing hard to get it all the small spaces. Bake 12-14 minutes to set up

3.In a bowl combine all the ingredients mix by hand or a electric mixer to get it smooth and fluffy. Spread into the cooled tart pan

  1. In a sauce pan combine chocolate chips and heavy cream and stir over med flame (NOT STOPPING) until its melted and smooth. Drizzle or cover the top pf the tart.
  2. Chill 2-4 hours so it gets firm before serving ENJOY
